March 16, 200619 yr Author Its just a butter cake, 250grams butter 1cup self raising flour 3 eggs 1/4 cup milk 100grams castor sugar (60 if you dont want it too sweet) Pretty much just self raising flour, butter, castor sugar, eggs and milk and the only important aspect is to beat as much air in as possible. Cream the butter and sugar, fold in flour and add milk, eggs and add tsp of vanilla essence and beat on low to combine and then medium for 4-5 minutes. Add cake batter into 20cm cake tin with circle of baking paper on bottom and a fine mist of canola oil spray around the edges of tin. Flour it if you're really woried about it sticking. If you want 2 layers either cut the 1 in half or repeat that recipe twice. The cake itself turned out perfect, I made it the day before at work then the next day I came in and it'd been decorated, and thats what was fcked up. Its meant to have an almost royal icing coat on the side and top with piped rossettes of cream/icing sugar. But the cream used was wrong and didnt hold, thus the entire top and side turned into a mess. Allow cake to cool. To finish just whip 600mil of thickened cream spread along the bottom layer and add half peices of strawberry, cover with more whipped cream. Creme chantille like was used in that cake is whipped cream with castor sugar and vanilla essence whipped in with the cream if you want the cream to be sweeter. Next just ice the top with a regular icing mixture + butter and milk like for any other cake, thickness of the icing is at your disgression. Anything else is probably too advanced, the way the cake was mean't to be none of you would be able to achieve. The "icing" that was on it in those pictures was the fcked up decoration smeared over it after it was fcked up with icing mixture added to strengthen it, which didnt work anyway. You should be able to make it from that recipe. If you can't you've fcked up.
