In iTunes, go to Edit, Preferences, Advanced, Importing, and select "MP3 Encoder" from the Import Using... list. Now it will import all of your CDs into MP3s. If you want to change an MP4 or AAC into an MP3, just follow the above steps; then right click on a MP4 song and choose "Convert Selection to MP3". I hope I could be of assistance to you.
