Cut about a half pound of tenderloin into thin strips. Rub with garlic oil, white pepper, and sea salt.

Mix olive oil, balsamic vinegar, garlic, black pepper, basil, and oregano. Place tenderloin strips in marinade and turn to coat evenly. Remove and place on rack for cooking.

Heat oven to 330 degrees and put in the tenderloin. While that cooks, mix au jus sauce with garlic, white pepper, and a thickener (I used xanthan gum). Cut half of the loaf of bread into three pieces (flat, one is for toast), and put them in to toast. Bring au jus sauce to a simmer for 10 minutes, stirring often.

Remove top piece of bread and put cheddar cheese on top. Return to toaster to melt cheese. Take out cooked tenderloin and pour au jus sauce into serving container. Put the tenderloin strips on bottom bread, and plate.

Fucking enjoy. Use toast or chips for unused au jus sauce, and don't expect to be hungry for a week.

As for the breakfast sandwhich, you to0ld us to cook the eggs Over easy, then said "Make sure the yolks are cooked all the way through" which is just the opposite of over easy, its over hard newb, the tenderloin looked good, why didnt you just cook all of the tenderloin and use the leftover jus with some worchiester sauce to make the au jus, it would have been better, but you have my vote so far cuase thats something that i would actually eat.

I cooked the eggs over easy so that remains in the directions. I realized my mistake when the yolk exploded all over my hand tho, so i put that in as well. It still tastes better with runny yolk tho.

Didn't really have time/patience to cook the whole thing at once, and it was a very lean piece. So I'm not sure I would have had enough drippings to make a decent amount. I did end up letting the fat from the meat and cheese drip in while I ate, and any meat that fell out got dipped and eaten, so I was content.

 

Definitely better than what you get in most fancy restaurants, at least.
