December 12, 200717 yr I just picked up "Charcuterie" by Michael Ruhlman and Brian Poleyn. It covers various methods of Charcuterie (Cured meats) and has several good recipes, of which i have only tried 1 of the forcemeats so far, but it was quite delicious. I only got it 6 days ago, and works been crazy but i plan i trying quite a few of these recipes.
